Organic FoodMissiouri American Pasturage, Inc. maintains its livestock
on grass pastures year round. During inclement weather, the animals receive
grass hay right in the pasture. The veal calves are left with the cow
in the pasture from birth to market. "We do not confine our animals
or use antibiotics, growth hormones, ionophores, steroids, chemically
altered feeds or by-product feeds. Animals that require veterinary treatment
are excluded from our meat products." A supply of Elysian veal and
Pasture "Purefect" Beef is available at most times. The USDA-inspected
meat is vacuum-packed and frozen. Shipments can be made to any location
in the U.S. Their meat can also be found at the Greater Springfield Farmers
Market on Saturdays from mid-April to the end of October. The veal cuts
are available as cutlets, loin chips, sirloin steak, rib roast, shoulder
eye roast, breast roast, cross-cut shanks stew, shish kabob, ground meat,
and liver. The beef is currently available as 30-week old, unweaned whole
ground only. It averages 93% lean and is packaged in 2# packages. Grass-finished
beef cuts will be available in the future. "We don't observe regular
business hours, so call ahead anytime between 8:00 AM and 8:00 PM."
Crocket Beefmasters has not used pesticides
or herbicides on their farm for over 20 years. Nor do they use antibiotics,
hormones, growth stimulants, or grain of any kind. Their animals are raised
exclusively on a pasture that is rich in legumes. Whole and halves of
beef are available, with smaller amounts by request. Green Hills Harvest produces organic milk from
Jersey-cross cows. Owners Kerry and Barb Buchmayer say that a few customers
have wondered if their skim and 2% milk is mislabeled because it tastes
so creamy. The Buchmayers feed their cows a limited amount of organic
grain to supplement the fresh pasture. Although the cows are technically
"grain-fed," they get about 1/3 to 1/2 as much grain as is typically
fed in a standard dairy. The milk is hormone and pesticide free. Green
Hills Harvest milk products will soon be available in select stores in
the Kansas City area. Pasture-Raised Poultry offers broiler chickens
raised in portable cages on pasture. The birds are fed organic grain when
available. The Ramers also have a limited supply of pasture-raised beef
and will raise other animals (such as pigs, turkeys, and rabbits) on request.
Schafer Farms Natural Meats. David and Alice
Schafer became involved in pasture-intensive farming in 1985 after a trip
to the grassland farms of New Zealand "whacked us on the side of
the head." Seeing the wisdom of the New Zealand ranching system,
they came home with a keen desire to recreate grassfarming in Missouri.
Now, fifteen years later, their family farm offers pasture-finished beef
and lamb plus pastured pork and chicken to mail order customers from as
far away as the Middle East. "We ship as little as one lamb chop
and as much as a whole steer." Local customers can buy their products
at their farm and at Wild Oats stores and select restaurants in Kansas
City. You will also find limited quantities at the SunSplash Market in
Naples, Florida, and Fresh Air Fare in St. Joseph, Missouri. The meat
from their dairy/British cross herd is "consistently tender."
The Semper Fidelis Ranch, established in 1979,
offers pasture-raised beef, pork, and chickens. The Hempels grind their
own grain. They do not use antibiotics or hormones. The beef is available
in quantity only. Spurling Farms animals are raised on pasture,
with minimal grain in the winter. Conventional corn feeding is available
for those who request it. The farm offers beef in whole, halves, or split
halves and whole fryers on a subscription basis. Check for availability
on the beef. Fryers are available June through September.
