cheesemaker Jonathan White who wanted to return butter and cheese to their
"lost grandeur." Currently, their Jersey cows are fed some grain,
but cheese from purely grassfed cows may be available by the spring of
2001. Fallow Hollow Deer Farm specializes in pasture-raised
venison, available fresh or frozen year-round. Pastured rabbits and poultry
(chicken, turkey, duck and pheasant) are sold as well. In addition, the
farm works cooperatively with other farms to market beef, baby beef, veal,
pork, lamb and goat. "We gladly take phone and fax orders and can
ship within the continental US. Order forms can be found on our web site,
with internet ordering coming soon." Freeman Homestead offers pastured chickens
and turkeys, grassfed beef, pork, and lamb. They also sell eggs from free-ranging
hens and ready-to-lay pullets (in season). The Freemans welcome visitors

to Oswego County Beef Producers, Sap Bush Hollow Farm offers a wide variety
of pasture-raised products, including chicken, beef, lamb, turkeys, pork,
sausage, and bacon that are free from hormones and antibiotics. Adele
and Jim Hayes have been practicing rotational grazing and sustainable
agriculture since 1979. Their goal is "to produce the best animals
under the most natural conditions we can achieve with our resident plant
and animal life mutually benefiting from our efforts." The meat is
available in individual cuts or whole, half or split-half carcasses. Lamb,
beef, pork, and veal are available frozen year round. The poultry is seasonal.
Sap Bush Hollow Farm, Seldom Seen Farm specializes in heritage breeds-Bourbon
red turkeys, Soay sheep, Dexter cattle, Wyandotte hens. "These were
the breeds that your grandma might have had in years gone by." These
rare breeds were selected to preserve our heritage and because they are
especially well adapted to grazing. Free-range eggs are available year
round. Pastured broilers are sold from June through November. Lamb, pork,
and beef are available by order as available. "We strive to be as
organic as possible, using homeopathic remedies where possible and only
resorting to conventional medications when the health of the animal is
at risk." Seldom Seen Farm, Sweet Grass Farm provides grassfed lamb, veal,
pork, and eggs from pastured hens. The lamb and veal are available from
July to November at the farm. Some of the grazing animals are fed grain
and some are strictly grassfed. Please inquire. ZuZu Petal's Farm strives to eliminate the
gap between producer and consumer. "We encourage our customers to
visit our farm and see how our animals are raised." The farm offers
pastured poultry, eggs from pastured hens, grass-finished lamb and beef.
Their beef comes from Scottish Highland Cattle and their lamb from Jacobs
Sheep. Both are conservancy breeds, rare breeds that are facing extinction.
The products are available at the farm and at Ithaca's Farmer's Market
in the summer and fall.
